4 slices of artisan bread (like sourdough or country loaf)
1 cup shredded mozzarella cheese
1 cup shredded white cheddar cheese
4 tablespoons salted butter, softened
2 tablespoons mayonnaise (optional, for extra crispiness)
Instructions
Preheat a skillet or griddle over medium heat.
Spread a thin, even layer of softened butter on one side of each bread slice. If using mayonnaise for added crispiness, spread it on the other side.
Combine mozzarella and white cheddar cheese in a bowl.
Place one slice of bread, buttered side down, onto the skillet.
Add a generous amount of the cheese mixture on top of the bread slice. Cover with another slice of bread, buttered side up.
Cook the sandwich until the bread is golden brown, about 3-4 minutes. Flip carefully and grill the other side until crispy and the cheese is melted, about another 3-4 minutes.
Remove from the skillet, let it rest for a minute, and slice in half. Serve hot and enjoy!
