  • 4 slices of artisan bread (like sourdough or country loaf)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded white cheddar cheese
  • 4 tablespoons salted butter, softened
  • 2 tablespoons mayonnaise (optional, for extra crispiness)

Instructions

  • Preheat a skillet or griddle over medium heat.
  • Spread a thin, even layer of softened butter on one side of each bread slice. If using mayonnaise for added crispiness, spread it on the other side.
  • Combine mozzarella and white cheddar cheese in a bowl.
  • Place one slice of bread, buttered side down, onto the skillet.
  • Add a generous amount of the cheese mixture on top of the bread slice. Cover with another slice of bread, buttered side up.
  • Cook the sandwich until the bread is golden brown, about 3-4 minutes. Flip carefully and grill the other side until crispy and the cheese is melted, about another 3-4 minutes.
  • Remove from the skillet, let it rest for a minute, and slice in half. Serve hot and enjoy!
