This easy Corn Fritters recipe features sweet corn kernels mixed with a light, seasoned batter, then pan-fried until golden and crispy. These fritters make a perfect snack, appetizer, or side dish for any meal.

  • 2 cups fresh or canned corn kernels (drained)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 tsp baking powder
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup green onions, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste
  • 2 tbsp vegetable oil (for frying)
  • Sour cream or salsa (for serving, optional)

Instructions

  • In a large bowl, whisk together flour, cornmeal, baking powder, garlic powder, paprika, salt, and pepper.
  • In another bowl, whisk eggs and milk, then pour the wet ingredients into the dry ingredients, stirring until just combined.
  • Fold in the corn kernels and green onions, mixing gently.
  • Heat vegetable oil in a large skillet over medium heat. Drop spoonfuls of the batter into the skillet, pressing them down slightly to flatten. Fry for 2-3 minutes per side until golden brown and crispy.
  • Transfer fritters to a plate lined with paper towels to drain excess oil. Serve warm with sour cream or salsa, if desired.

Notes

  • You can use frozen corn (thawed) if fresh or canned corn isn’t available.
  • Add diced jalapeños or shredded cheese for an extra kick of flavor
