For the Pork Chops:
4 bone-in pork chops
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
1 cup buttermilk
1 egg
½ cup vegetable oil (for frying)
For the Bacon Gravy:
4 slices bacon, chopped
2 tablespoons bacon drippings
2 tablespoons all-purpose flour
1 ½ cups whole milk
Salt and pepper, to taste
Instructions
Prepare the Coating: In a shallow bowl, mix flour, salt, pepper, garlic powder, onion powder, and paprika.
Dredge the Pork Chops: In another bowl, whisk buttermilk and egg. Dip each pork chop into the buttermilk mixture, then coat in the seasoned flour.
Fry the Pork Chops: Heat oil in a skillet over medium heat. Fry pork chops for 4-5 minutes per side or until golden brown and cooked through. Remove and set aside.
Make the Bacon Gravy: Cook chopped bacon in the same skillet until crispy. Remove bacon, leaving 2 tablespoons of drippings. Whisk in flour and cook for 1-2 minutes. Slowly add milk, whisking constantly until thickened. Season with salt and pepper.
Serve: Pour the bacon gravy over the fried pork chops and garnish with crispy bacon bits.
Notes
Use a meat thermometer to ensure pork reaches an internal temperature of 145°F.
Serve with mashed potatoes, biscuits, or green beans for a full meal.
Add a dash of hot sauce to the gravy for extra flavor.
