  • 1 lb fresh green beans, trimmed
  • 1 lb baby potatoes, halved
  • 6 slices bacon, cooked and crumbled
  • 1 packet ranch seasoning mix (1 oz)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • In a large pot, bring water to a boil and cook the baby potatoes for 10-12 minutes until tender. Drain and set aside.
  • In the same pot, blanch the green beans for 4-5 minutes until crisp-tender. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the cooked potatoes and green beans, tossing to coat them in the oil.
  • Stir in ranch seasoning, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until everything is well-seasoned and slightly crispy.
  • Add the crumbled bacon and toss to combine. Garnish with fresh parsley and serve warm.

Notes

  • You can substitute frozen green beans if fresh aren’t available, just thaw and pat them dry before cooking.
