1 lb fresh green beans, trimmed
1 lb baby potatoes, halved
6 slices bacon, cooked and crumbled
1 packet ranch seasoning mix (1 oz)
2 tbsp olive oil
1 tsp garlic powder
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
In a large pot, bring water to a boil and cook the baby potatoes for 10-12 minutes until tender. Drain and set aside.
In the same pot, blanch the green beans for 4-5 minutes until crisp-tender. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the cooked potatoes and green beans, tossing to coat them in the oil.
Stir in ranch seasoning, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until everything is well-seasoned and slightly crispy.
Add the crumbled bacon and toss to combine. Garnish with fresh parsley and serve warm.
Notes
You can substitute frozen green beans if fresh aren’t available, just thaw and pat them dry before cooking.
