This Creamy Alfredo Lasagna Soup is a cozy and indulgent twist on classic lasagna, featuring tender lasagna noodles in a rich, cheesy Alfredo broth. Loaded with Italian seasonings, Parmesan, and creamy goodness, this one-pot soup is perfect for a comforting meal any night of the week.

  • 8 lasagna noodles, broken into pieces
  • 1 lb ground Italian sausage or chicken
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 small onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • ¼ cup chopped fresh parsley

Instructions

  • Cook lasagna noodles according to package instructions. Drain and set aside.
  • In a large pot, heat olive oil over medium heat. Add sausage or chicken and cook until browned. Remove and set aside.
  • In the same pot, melt butter and sauté onion and garlic until soft. Stir in flour and cook for 1 minute.
  • Gradually whisk in chicken broth, heavy cream, and milk, stirring constantly.
  • Add Italian seasoning, red pepper flakes, salt, and pepper. Bring to a gentle simmer.
  • Stir in Parmesan and mozzarella cheese until melted and smooth.
  • Return cooked sausage or chicken to the pot, then add cooked lasagna noodles. Simmer for 5 minutes.
  • Garnish with fresh parsley and serve hot.

  • Use rotisserie chicken for a quicker version.
  • Adjust thickness by adding more broth or cream.
  • Add spinach or mushrooms for extra flavor.
