  • 400g spaghetti
  • 2 chicken breasts, diced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 3 egg yolks
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp black pepper
  • 1/2 tsp salt
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until golden and fully cooked through. Remove and set aside.
  • In the same skillet, sauté minced garlic until fragrant. Reduce heat to low.
  • In a bowl, whisk together heavy cream, parmesan cheese, egg yolks, black pepper, and salt. Gradually add the mixture to the skillet, stirring constantly to avoid curdling.
  • Add the cooked spaghetti and chicken to the skillet. Toss well to coat the pasta evenly in the sauce. Use reserved pasta water to adjust the sauce consistency if needed.
  • Garnish with chopped parsley and extra parmesan cheese before serving.
