  • 250g sausage (halal chicken or beef sausage, casing removed)
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the rigatoni pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  • Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned, breaking it into small pieces.
  • Add the onion and garlic to the skillet and sauté until softened and fragrant.
  • Stir in paprika, chili flakes (if using), and oregano, cooking for 1 minute.
  • Pour in the chicken broth and heavy cream, stirring to combine. Simmer for 5 minutes until slightly thickened.
  • Stir in Parmesan cheese until melted, then add the cooked rigatoni, tossing to coat the pasta evenly in the sauce.
  • If needed, add reserved pasta water a little at a time to reach the desired sauce consistency.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.
