  • 300g pasta (penne, rigatoni, or your choice)
  • 2 chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups grated white cheddar cheese
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp dried Italian herbs
  • Fresh chopped parsley, for garnish

Instructions

  • Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt, pepper, and onion powder. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove and set aside.
  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth and bring to a gentle simmer.
  • Stir in the heavy cream, followed by the grated white cheddar cheese. Continue stirring until the cheese is fully melted and the sauce is smooth.
  • Add dried Italian herbs and season with additional salt and pepper if needed.
  • Return the cooked chicken to the skillet and toss to coat with the sauce.
  • Add the cooked pasta to the skillet, stirring until well combined and heated through.
  • Garnish with fresh chopped parsley and serve warm.

Notes

  • For extra creaminess, reserve 1/2 cup of pasta water and add it to the sauce if needed.
  • Adjust the thickness of the sauce by adding more or less cream or cheese to your preference.
  • Feel free to add vegetables like broccoli or spinach for added nutrition.
