2 boneless, skinless chicken breasts
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon black pepper
1 cup pasta (such as small shells or ditalini)
1 tablespoon butter
½ cup shredded mozzarella cheese
Fresh basil for garnish
Instructions
Add chicken breasts, chicken broth, diced tomatoes, garlic, Italian seasoning, salt, and pepper to the crock pot.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender.
Remove chicken, shred it, and return it to the crock pot.
Stir in heavy cream, Parmesan cheese, butter, and pasta. Cover and cook for another 20-25 minutes until pasta is tender.
Stir in shredded mozzarella cheese until melted.
Serve hot, garnished with fresh basil.
Notes
For extra richness, add a splash of heavy cream before serving.
