  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 1 packet chili seasoning (or homemade)
  • 2 cups uncooked elbow macaroni
  • 2 cups shredded cheddar cheese (plus extra for topping)
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Optional toppings: sliced green onions, jalapeños, sour cream, cilantro

Instructions

  1. Cook the ground beef:
    In a skillet over medium heat, brown the ground beef with diced onion and garlic, about 5-7 minutes. Drain any excess fat.
  2. Transfer to crockpot:
    Add the cooked beef, diced tomatoes, kidney beans, tomato sauce, beef broth, and chili seasoning to the crockpot. Stir to combine.
  3. Slow cook:
    Cover and cook on low for 4-5 hours or on high for 2-3 hours, allowing the flavors to meld.
  4. Add the pasta and cheese:
    About 30 minutes before serving, stir in the uncooked elbow macaroni. Cover and cook on high for an additional 20-30 minutes, or until the pasta is tender.

    Once the pasta is cooked, stir in the shredded cheddar cheese and sour cream until melted and creamy. Taste and adjust seasonings with salt and pepper if needed.
