  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cups beef broth
  • 1 packet French onion soup mix
  • 1 1/2 cups shredded Gruyère or Swiss cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Prepare the meatballs:
    In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan cheese, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined. Roll the mixture into 1-inch meatballs.
  • Sear the meatballs:
    Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides for about 4-5 minutes (they don’t need to be fully cooked). Transfer the seared meatballs to the crockpot.
  • Cook the onions:
    In the same skillet, add the sliced onions and cook for 5-7 minutes, stirring occasionally, until softened and caramelized. Add the onions to the crockpot.
  • Make the sauce:
    In a bowl, mix the beef broth with the French onion soup mix. Pour the mixture over the meatballs and onions in the crockpot.
  • Slow cook:
    Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the meatballs are tender and fully cooked.
  • Add the cheese (optional):
    About 15 minutes before serving, sprinkle shredded Gruyère or Swiss cheese over the top of the meatballs. Cover and let the cheese melt.
  • Serve hot:
    Garnish with fresh parsley if desired, and serve the meatballs with mashed potatoes, rice, or crusty bread.

Notes

  • For extra flavor, deglaze the skillet with a splash of white wine after cooking the onions before adding them to the crockpot.
  • You can substitute ground turkey or pork for the ground beef.
