Ingredients

1 lb Italian sausage (mild or spicy)
1 small onion, diced
3 garlic cloves, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream
1 bag (10 oz) cheese tortellini
2 cups spinach (optional)
Salt and pepper to taste
1 tsp Italian seasoning
Instructions
Brown the sausage in a skillet over medium heat, breaking it into crumbles. Drain excess grease.
In a Crockpot, combine the browned sausage, onion, garlic, chicken broth, diced tomatoes, and Italian seasoning.
Cook on low for 6-8 hours or high for 3-4 hours.
Add the tortellini and heavy cream during the last 30 minutes of cooking. Stir well.
If using spinach, add it just before serving to wilt it.
Season with salt and pepper to taste. Serve warm.
Notes
Use frozen tortellini for convenience, or substitute with fresh tortellini if desired.
