Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the rainbow sprinkles.
  7. Scoop dough onto the prepared baking sheet, spacing each cookie about 2 inches apart.
  8. Bake for 10–12 minutes, until edges are set but centers are soft. Allow cookies to cool on the sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra softness, slightly underbake cookies as they will continue to firm up while cooling.
  • Add more or fewer sprinkles depending on preference.
  • Store cookies in an airtight container at room temperature for up to 3 days.
