Mississippi Mud Potatoes are rich, hearty, and irresistibly cheesy. This indulgent side dish features tender potatoes baked in a creamy, cheesy sauce with crispy bacon. It’s a Southern-inspired comfort food classic, perfect for potlucks, family dinners, or any occasion that calls for something warm and satisfying.

Ingredients

6 large Russet potatoes, peeled and diced
1 ½ cups sour cream
2 cups shredded cheddar cheese
1 packet ranch seasoning mix
1 lb bacon, cooked and crumbled
4 green onions, chopped
Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix together sour cream, ranch seasoning, salt, pepper, and half the cheese.

  3. Add in diced potatoes, bacon (reserve some for topping), and green onions. Toss to coat.

  4. Transfer to a greased 9x13-inch baking dish.

  5. Sprinkle remaining cheese and bacon on top.

  6. Cover with foil and bake for 45 minutes.

  7. Remove foil and bake an additional 10-15 minutes until bubbly and golden.

  8. Serve hot and garnish with extra green onions if desired.

Notes

You can use red potatoes or Yukon golds for a slightly different texture. Great for making ahead—just prep and refrigerate, then bake when ready.
