  • 2 lbs baby potatoes, halved or quartered

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream

  • 2 tbsp Dijon mustard

  • 2 tbsp apple cider vinegar

  • 1/3 cup chopped fresh dill

  • 1/4 cup chopped green onions

  • Salt and pepper to taste

  • Optional: 2 hard-boiled eggs, chopped

Instructions

  • Boil potatoes in salted water until fork-tender (about 15 minutes). Drain and let cool.

  • In a large bowl, mix mayonnaise, sour cream, mustard, vinegar, and dill.

  • Add cooled potatoes and green onions to the bowl. Toss gently to coat.

  • Season with salt and pepper. Add chopped eggs if desired.

 

  • Chill for at least 1 hour before serving.
