Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz uncooked pasta (penne or rotini)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the pasta:
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.
  3. Cook the beef:
In a large skillet, heat olive oil over medium heat. Add ground beef and diced onion, cooking for 5-7 minutes until the beef is browned and the onions are soft. Drain excess fat.
  4. Add garlic and seasonings:
Stir in minced garlic, garlic powder, onion powder, salt, and pepper. Cook for another 1-2 minutes until fragrant.
  5. Make the creamy sauce:
In a large bowl, mix together cream of mushroom soup, sour cream, milk, and 1 cup of shredded cheddar cheese. Add the cooked ground beef and pasta, stirring to combine everything.
  6. Assemble the casserole:
Transfer the beef and pasta mixture to a greased 9x13-inch casserole dish. Top with the remaining 1 cup of shredded cheddar cheese.
  7. Bake:
Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Serve hot:
Garnish with fresh parsley if desired, and serve hot with a side of garlic bread or a salad.

Notes

  • You can substitute ground turkey for ground beef for a lighter version.
  • Add vegetables like peas or spinach to the casserole for added nutrition and color.
