  • 1 lb ground beef
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 can diced tomatoes with green chilies (Rotel, 10 oz)
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 8 small corn tortillas, cut into strips
  • 1/2 cup salsa
  • 1/2 cup sliced black olives (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5–7 minutes. Drain any excess fat.
  • Stir in taco seasoning, black beans, corn, diced tomatoes, salsa, and salt and pepper. Simmer for 5 minutes.
  • In a greased 9x13-inch baking dish, layer half of the tortilla strips, followed by half of the beef mixture, then half of the shredded cheese. Repeat the layers.
  • Top with sour cream, remaining cheese, and black olives (if using).
  • Bake for 25–30 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes

  • Add jalapeños for a spicy kick or cilantro for a fresh touch.
  • You can substitute ground beef with ground turkey or chicken for a lighter option.
  • Serve with a side of guacamole, salsa, or sour cream.
