Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  • In a separate large bowl, whisk together pumpkin puree, oil, sugar, eggs, and vanilla until smooth.
  • Gradually stir the dry ingredients into the wet ingredients until just combined—be careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, add 1/2 cup of chopped nuts or chocolate chips to the batter.
  • Wrap the bread tightly in plastic wrap or foil and store at room temperature for up to 4 days, or freeze for up to 3 months.
  • Try spreading butter or cream cheese on a slice for an extra delicious treat.
