  • 1 packet taco seasoning (or homemade)
  • 1/4 cup water
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups Fritos corn chips
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • Optional toppings: diced tomatoes, green onions, shredded lettuce, jalapeños, guacamole

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef:
    In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
  3. Add seasoning and beans:
    Stir in the taco seasoning, water, diced tomatoes with green chilies, and black beans. Simmer for 5 minutes until the mixture thickens slightly.
  4. Assemble the casserole:
    Spread a layer of Fritos corn chips at the bottom of a greased 9x13-inch baking dish. Top with the seasoned beef and bean mixture, then sprinkle shredded cheese evenly over the top.
  5. Bake:
