  • 4 cups yellow squash, sliced
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup crushed crackers (such as Ritz)
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

 

  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a skillet, sauté squash and onion over medium heat until tender. Drain any excess liquid.
  3. In a large bowl, mix squash, onion, cheddar cheese, sour cream, mayonnaise, eggs, salt, and pepper.
  4. Pour mixture into the prepared baking dish.
  5. In a small bowl, mix crushed crackers with melted butter. Sprinkle over casserole.
  6. Bake for 25-30 minutes or until the top is golden brown.
  7. Let cool slightly before serving.

Notes

  • Use Panko or breadcrumbs instead of crackers for a different texture.
  • Add cooked bacon or ham for extra flavor.

 

  • Can be made ahead and refrigerated before baking.
