  • 4 chicken thighs (bone-in, skin-on)
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 1 cup dry white wine
  • 1 cup chicken stock
  • 2 tbsp tomato paste
  • 1 tbsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a large oven-safe pot over medium heat. Brown chicken thighs on both sides, then set aside.
  • In the same pot, sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
  • Add mushrooms and cook for another 3 minutes.
  • Stir in white wine, chicken stock, tomato paste, thyme, and bay leaves. Bring to a simmer.
  • Return the chicken to the pot, cover, and transfer to the preheated oven.
  • Bake for 1 hour or until chicken is tender and cooked through.
  • Remove bay leaves, garnish with parsley, and serve hot.

Notes

  • Substitute white wine with more chicken stock if preferred.
  • Serve with crusty bread or mashed potatoes for a complete meal.
