Instructions

  1. Preheat the oven to 325°F. Grease a springform pan.
  2. Mix graham cracker crumbs with melted butter. Press into the bottom of the pan for the crust.
  3. Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs one at a time, beating well after each.
  4. Fold in the rainbow sprinkles.
  5. Pour the batter into the crust and smooth the top.
  6. Bake for 60–70 minutes, until the center is set.
  7. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Garnish with additional sprinkles before serving.
