  • 1 lb baby potatoes, halved
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced

  • Salt and pepper to taste

Instructions

  • Season chicken thighs with garlic powder, paprika, thyme, salt, and pepper.
  • Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add chicken thighs and cook for 5-7 minutes per side, until browned and cooked through. Remove chicken and set aside.
  • In the same skillet, add the remaining olive oil and baby potatoes. Season with salt and pepper and cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and tender.
