  • 250g linguine or spaghetti
  • 300g large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • Lemon wedges (for serving)

Instructions

  • Cook the pasta in a large pot of salted boiling water according to package instructions. Reserve 1/2 cup pasta water, then drain.
  • Heat 2 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  • In the same skillet, add remaining butter and olive oil. Sauté minced garlic until fragrant, about 1 minute. If desired, add chili flakes.
  • Return the shrimp to the skillet. Toss in the cooked pasta, reserved pasta water, Parmesan cheese, and parsley. Mix well until evenly coated.
  • Adjust seasoning with more salt and pepper if needed. Serve hot with lemon wedges on the side.

Notes

  • You can substitute linguine with any pasta of your choice, such as fettuccine or penne.
  • For extra creaminess, add a splash of heavy cream or a dollop of cream cheese when tossing the pasta.
