This creamy garlic chicken gnocchi skillet is a delicious one-pan meal packed with tender chicken, pillowy gnocchi, and a rich garlic-infused sauce. Perfect for busy weeknights, this dish is comforting, easy to make, and bursting with flavor.

Ingredients

  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts (cubed)
  • Salt and pepper (to taste)
  • 4 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 package (16 oz) potato gnocchi
  • 1 cup baby spinach
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden brown. Remove from the pan.
  2. In the same skillet, add garlic and Italian seasoning. Sauté for 30 seconds until fragrant.
  3. Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  4. Add Parmesan cheese and gnocchi, stirring to coat. Cover and cook for 5 minutes until gnocchi is tender.
  5. Stir in cooked chicken, baby spinach, and red pepper flakes (if using). Cook until spinach wilts.
  6. Serve hot, garnished with extra Parmesan if desired.

Notes

  • For extra creaminess, add 2 oz of cream cheese.
  • Substitute half-and-half for a lighter version.
