  • 300g pasta (spaghetti, fettuccine, or penne)
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 250g mushrooms (button, cremini, or shiitake), sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
  • In a large skillet, heat olive oil and 2 tbsp butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  • Add sliced mushrooms and cook for 5-7 minutes until softened and golden. Season with salt and pepper.
  • Reduce heat and stir in heavy cream. Let it simmer gently for 2-3 minutes.
  • Stir in Parmesan cheese and mix until smooth. Add the cooked pasta to the skillet and toss to coat. If needed, use reserved pasta water to adjust the sauce consistency.
  • Remove from heat, garnish with fresh parsley, and serve warm.
