Ingredients

  • Cooked chicken breasts (shredded or diced)
  • Penne or rigatoni pasta (cooked)
  • Garlic (minced)
  • Parmesan cheese (grated)
  • Mozzarella cheese (shredded)
  • Heavy cream
  • Chicken broth
  • Butter
  • Olive oil
  • All-purpose flour
  • Salt
  • Pepper
  • Italian seasoning
  • Fresh parsley (optional, for garnish)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13 baking dish.
  • Cook pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.
  • Add butter and let it melt. Stir in the flour to make a roux, cooking for 1–2 minutes.
  • Gradually whisk in chicken broth and heavy cream, stirring continuously until the sauce thickens, about 5 minutes.
  • Stir in grated Parmesan cheese, salt, pepper, and Italian seasoning. Simmer for another 2 minutes until the cheese is melted and the sauce is creamy.
  • In a large mixing bowl, combine the cooked pasta, shredded chicken, and sauce. Mix well.
  • Transfer the mixture to the prepared baking dish and top with shredded mozzarella cheese.
  • Bake for 20–25 minutes, or until the cheese is melted and golden.
  • Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.

  • For extra flavor, add sautéed spinach or mushrooms to the pasta mixture.
