This authentic German Potato Salad recipe is a tangy, savory side dish made with tender potatoes, crispy bacon, and a warm vinegar dressing. Perfect for barbecues, picnics, or traditional German meals, it’s a hearty and flavorful twist on the classic potato salad.

  • 2 pounds red potatoes

  • 6 slices bacon, chopped

  • 1 small yellow onion, finely chopped

  • 1/4 cup white vinegar

  • 3 tablespoons sugar

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons chopped fresh parsley

Instructions

  1. Boil potatoes in salted water until tender, about 15–20 minutes. Drain and let cool slightly. Slice into rounds or cubes.

  2. In a skillet, cook bacon until crispy. Remove with a slotted spoon and set aside.

  3. In the same skillet, cook onions in bacon drippings until soft.

  4. Stir in vinegar, sugar, mustard, salt, and pepper. Bring to a simmer.

  5. Add sliced potatoes and cooked bacon to the skillet, tossing gently to coat.

  6. Cook for 2–3 minutes until heated through.

  7. Sprinkle with chopped parsley and serve warm.

Notes

For best flavor, serve warm. Can also be served at room temperature. Add extra vinegar or mustard for a tangier taste.
