  • 3/4 cup unsalted butter, softened

  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  • Prepare Dough: In a large bowl, cream butter and brown sugar until light and fluffy. Add egg, molasses, and vanilla; mix well.
  • Combine Dry Ingredients: In a separate bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  • Mix Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until combined. Shape dough into a disc, wrap in plastic, and chill for 1 hour.
  • Roll & Cut: Preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness on a floured surface. Cut into shapes with cookie cutters.
  • Bake: Place cookies on lined baking sheets. Bake for 8-10 minutes, until edges are firm. Cool completely before decorating.

Notes

  • For extra softness, avoid overbaking. Cookies will firm up as they cool.
