Ground Beef Enchilada Soup is a flavorful, one-pot meal packed with ground beef, enchilada sauce, beans, and Mexican spices. This comforting soup is a perfect family favorite, quick to prepare, and bursting with delicious, hearty flavors.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) red enchilada sauce
  • 4 cups beef broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, tortilla strips, cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. Add diced onion and garlic to the pot, cooking until softened and fragrant.
  3. Stir in enchilada sauce, beef broth, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Bring the soup to a simmer, reduce heat, and cook for 15-20 minutes, stirring occasionally.
  5. Ladle the soup into bowls and top with shredded cheese, sour cream, tortilla strips, and cilantro as desired.

Notes

  • For a spicier kick, add diced green chilies or a dash of hot sauce.
  • Substitute ground turkey or chicken for a leaner option.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
