  • 1 small onion, diced
  • 1 bell pepper, diced

Instructions

  • Cook the sausage:
    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add ground sausage and cook, breaking it apart, until browned, about 5-7 minutes. Remove sausage from the skillet and set aside.
  • Sauté the vegetables:
    In the same skillet, add the remaining olive oil. Sauté the diced onion and bell pepper until softened, about 3-4 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
  • Cook the rice:
    Stir in the uncooked rice, garlic powder, paprika, salt, and pepper. Add the chicken broth and diced tomatoes. Bring to a simmer, then reduce heat to low. Cover and cook for 15-18 minutes until the rice is tender and has absorbed the liquid.
  • Combine and serve:
    Return the cooked sausage to the skillet and mix with the rice and vegetables. Cook for an additional 2-3 minutes to heat through. Garnish with fresh parsley if desired and serve hot.
