  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 2 cups cooked elbow macaroni or rotini
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions (for garnish, optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  • Add diced onion, garlic, paprika, garlic powder, salt, and pepper to the skillet. Cook for 3-4 minutes until onions are softened.
  • Stir in diced tomatoes (with juice), cream of mushroom soup, and sour cream. Mix well and simmer for 5 minutes.
  • Fold in cooked pasta and 1 cup of cheddar cheese. Transfer the mixture to a greased 9x13-inch baking dish.
  • Top with remaining cheddar and mozzarella cheese. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  • Garnish with chopped green onions before serving.

Notes

  • You can add sautéed mushrooms or bell peppers for extra vegetables.
  • Swap the cream of mushroom soup with cream of chicken or celery for a different flavor.
