    • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
    • 2 tbsp olive oil
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 zucchini, sliced
    • 1 cup cherry tomatoes, halved
    • 1 small onion, sliced
    • 3 garlic cloves, minced
    • 1 tsp paprika
    • ½ tsp dried oregano
    • ½ tsp dried basil
    • ½ tsp salt
    • ¼ tsp black pepper
    • ¼ tsp red pepper flakes (optional)
    • 2 tbsp lemon juice
    • ¼ cup fresh parsley, chopped

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.
  2. Add chicken pieces, season with salt, pepper, and paprika. Cook for 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add remaining olive oil, onion, and garlic. Sauté for 1-2 minutes until fragrant.
  4. Add bell peppers, zucchini, and cherry tomatoes. Cook for 5-6 minutes until vegetables are tender but still crisp.
  5. Return the cooked chicken to the skillet. Stir in oregano, basil, and red pepper flakes.
  6. Drizzle with lemon juice and mix well. Cook for another 1-2 minutes to blend flavors.
  7. Garnish with fresh parsley and serve warm.
