  • 1 tsp baking powder
  • 1/4 tsp salt

Vanilla Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  4. Stir in lemon juice, lemon zest, and vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with milk, until the batter is smooth.
  6. Divide the batter evenly into the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean. Cool completely before frosting.
  8. To make the frosting, beat butter and powdered sugar together until smooth. Add vanilla extract and heavy cream, beating until fluffy.
