  • ¾ cup granulated sugar

  • 2 large eggs

  • ¼ cup honey

  • 1 tsp vanilla extract

  • ½ cup sour cream

  • 1 cup diced fresh peaches

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened

  • ¼ cup sugar

  • 1 egg yolk

  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake pan with liners.

  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then honey and vanilla.

  4. Mix in sour cream, then gradually add dry ingredients. Fold in diced peaches.

  5. In a separate bowl, mix cream cheese, sugar, egg yolk, and vanilla until smooth.

  6. Fill cupcake liners halfway with batter. Add a spoonful of cream cheese mixture, then top with more batter.

  7. Bake for 20–25 minutes or until golden and a toothpick comes out clean. Cool before serving.

Notes

Use ripe peaches for best flavor. You can also use canned peaches—just drain well. Store in fridge up to 4 days.
