Ingredients

Scale
  • 4 cups cooked chicken (shredded or cubed)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 slices bacon, cooked and crumbled
  • 34 jalapeños, diced (remove seeds for less heat)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix together softened cream cheese, sour cream, garlic powder, onion powder, salt, and pepper until smooth.
  • Stir in shredded chicken, half of the shredded cheddar cheese, half of the mozzarella, diced jalapeños, and crumbled bacon.
  • Transfer the mixture to a greased 9x13-inch baking dish and spread it evenly.
  • Top with the remaining cheddar and mozzarella cheese. Sprinkle breadcrumbs on top if using.
  • Bake for 20–25 minutes, or until the casserole is bubbly and the cheese is golden and melted.
  • Let cool slightly before serving.

Notes

  • You can adjust the heat by using more or fewer jalapeños or adding some of the seeds.
  • For extra flavor, top with more crispy bacon bits before serving.
  • This casserole is low-carb but can be served with rice or bread for those who want more carbs.
