  • 1 lb ground beef
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 can (16 oz) refrigerated biscuit dough
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add ground beef, onion, and bell pepper. Cook until the beef is browned and vegetables are tender, about 7-8 minutes. Drain excess fat.
  • Stir in taco seasoning, diced tomatoes with green chilies, garlic powder, onion powder, salt, and pepper. Simmer for 5 minutes.
  • In a bowl, mix sour cream, mayonnaise, and half of the shredded cheddar cheese.
  • In a greased 9x13-inch casserole dish, press the biscuit dough evenly into the bottom of the dish.
  • Spread the cooked beef mixture over the biscuit layer, then spread the sour cream and cheese mixture on top.
  • Sprinkle the remaining cheddar cheese over the top.
  • Bake for 25-30 minutes until the cheese is melted and bubbly, and the biscuits are cooked through.
  • Let cool slightly before serving.
