King Ranch Chicken Casserole is a classic Tex-Mex comfort dish featuring shredded chicken, corn tortillas, cheddar cheese, and a creamy, spicy sauce made from condensed soups, tomatoes, and green chilies. This easy casserole is ideal for feeding a crowd or meal prepping, offering layers of bold flavors and cheesy goodness.

  • 3 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 12 corn tortillas, torn into pieces
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish with cooking spray.
  2. In a large skillet, sauté onion, bell pepper, and garlic until softened.
  3. Stir in the cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, chicken broth, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  4. Layer half the torn tortillas in the prepared dish, followed by half of the shredded chicken, half of the sauce, and half of the cheese.
  5. Repeat the layers with the remaining tortillas, chicken, sauce, and cheese.
  6. Bake for 30-35 minutes until bubbly and the cheese is melted. Let rest for 10 minutes before serving.

Notes

  • Rotisserie chicken works well for convenience.
  • Add black beans or corn for additional texture.
