  • 1 lb (450g) carrots, peeled and sliced

  • 2 tablespoons butter

  • 2 tablespoons honey or brown sugar

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • ¼ teaspoon salt

  • ⅛ teaspoon black pepper

  • Fresh parsley (optional, for garnish)

Instructions

  1. In a medium saucepan, bring water to a boil. Add sliced carrots and cook until just tender, about 5–7 minutes.

  2. Drain carrots and return them to the pan.

  3. Add butter, honey (or brown sugar), lemon juice, and lemon zest.

  4. Cook over medium heat, stirring often, until the glaze thickens and coats the carrots, about 3–4 minutes.

  5. Season with salt and pepper.

  6. Garnish with parsley if desired. Serve warm.
