Ingredients

  • Chicken breasts (cut into bite-sized pieces)
  • Russet potatoes (diced)
  • Cheddar cheese (shredded)
  • Bacon (cooked and crumbled)
  • Olive oil
  • Garlic powder
  • Onion powder
  • Paprika
  • Salt
  • Pepper
  • Green onions (chopped, for garnish)
  • Sour cream (optional, for serving)

Instructions

  • Preheat oven to 400°F (200°C) and grease a 9x13 baking dish.
  • In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread the potatoes evenly in the prepared baking dish and bake for 30–35 minutes, stirring halfway through, until crispy and golden.
  • While the potatoes are baking, season the chicken pieces with salt and pepper.
  • Once the potatoes are cooked, remove them from the oven and lower the temperature to 350°F (175°C).
  • Layer the seasoned chicken evenly over the potatoes, then top with shredded cheddar cheese and crumbled bacon.
  • Return the casserole to the oven and bake for 20–25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
