  • 1/2 cup panko breadcrumbs

  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons butter, melted
  • 1/4 cup mayonnaise (or Greek yogurt)
  • 1 tablespoon Dijon mustard

Instructions

  • Preheat oven to 400°F (200°C).
  • Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
  • In a bowl, combine Parmesan cheese, provolone cheese, panko breadcrumbs, Italian seasoning, and melted butter.
  • In a separate bowl, mix the mayonnaise and Dijon mustard.
  • Coat each chicken breast with the mayonnaise mixture, then press into the Parmesan and breadcrumb mixture until fully coated.
  • Place the chicken on a greased baking sheet and bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F and the crust is golden brown.
  • Serve hot, garnished with fresh parsley if desired.
