  • 300g linguine or spaghetti
  • 2 tbsp olive oil
  • 500g large shrimp, peeled and deveined
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp dried Italian seasoning
  • 1 cup diced tomatoes (canned or fresh)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water and set pasta aside.
  • Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes until pink and cooked through. Remove shrimp and set aside.
  • In the same skillet, sauté onions until soft and translucent. Add minced garlic and cook for 1 minute.
  • Stir in diced tomatoes, heavy cream, chicken broth, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 5-7 minutes until the sauce thickens slightly.
  • Return the cooked shrimp to the skillet and toss to coat in the sauce.
  • Add the cooked pasta to the skillet and mix well. If needed, add reserved pasta water to adjust the sauce's consistency.
  • Garnish with fresh parsley and serve immediately.

Notes

  • Adjust the spice level by increasing or omitting the red pepper flakes.
  • Substitute linguine with any pasta of your choice, such as fettuccine or penne.
  • To make it dairy-free, use a plant-based cream and cheese alternative.
