  • 2 cups shredded cooked chicken
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can diced tomatoes with green chilies
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup shredded Mexican cheese blend
  • 6 small corn tortillas
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix chicken, black beans, corn, diced tomatoes, salsa, cumin, and chili powder. Season with salt and pepper.
  • Layer 3 tortillas at the bottom of a greased baking dish.
  • Spread half of the chicken mixture over the tortillas.
  • Add another layer of tortillas and top with the remaining chicken mixture.
  • Sprinkle cheese evenly on top.
  • Bake for 20-25 minutes until cheese is bubbly and golden.
