  • 8 oz elbow macaroni (or pasta of choice)
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 packet taco seasoning (or homemade)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: sliced jalapeños, diced tomatoes, fresh cilantro, avocado

Instructions

  • Cook the pasta:
    Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  • Cook the ground beef:
    In a large skillet, heat olive oil over medium heat. Add ground beef, onion, and bell pepper. Cook for 5-7 minutes, breaking up the beef, until browned and the vegetables are softened. Drain excess fat if necessary.
