  • 1 1/2 lbs ground beef
  • 1 packet taco seasoning
  • 1 cup crushed tortilla chips or breadcrumbs
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese (plus extra for topping)
  • 1 egg, lightly beaten
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper (optional)
  • 2 tablespoons ketchup or more salsa (for topping)
  • Fresh cilantro for garnish (optional)

Instructions

  • Preheat oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  • Mix the meatloaf ingredients:
    In a large bowl, combine ground beef, taco seasoning, crushed tortilla chips (or breadcrumbs), salsa, shredded cheese, egg, diced onion, and bell pepper (if using). Mix until just combined.
  • Form the meatloaf:
    Shape the meat mixture into a loaf and place it in the prepared loaf pan.
  • Add the topping:
    Spread ketchup or additional salsa over the top of the meatloaf.
  • Bake the meatloaf:
    Bake for 40-45 minutes until fully cooked (internal temperature of 160°F). Remove from the oven and sprinkle with additional shredded cheddar cheese. Return to the oven for another 5 minutes or until the cheese is melted and bubbly.
  • Rest and serve:
    Let the meatloaf rest for 5-10 minutes before slicing. Garnish with fresh cilantro if desired and serve with sour cream, guacamole, or extra salsa.
