Mixed Up Lasagna is a delicious, deconstructed take on traditional lasagna. This dish uses all the same ingredients—ground beef, marinara sauce, ricotta, and mozzarella cheese—but layers them in a casserole dish for a quicker, more casual preparation. It's the perfect weeknight dinner that delivers comfort without the fuss of layering.

  • 1 lb ground beef
  • 12 oz pasta (penne, rotini, or rigatoni)
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.
  2. Cook the pasta according to package directions, drain, and set aside.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. In a large bowl, combine the cooked pasta, ricotta cheese, and half of the mozzarella. Stir in the meat sauce until well combined.
  7. Spread the mixture evenly in the prepared casserole dish and top with the remaining mozzarella and Parmesan.
  8. Bake for 20-25 minutes, until the cheese is melted and bubbly. Garnish with fresh basil or parsley if desired before serving.
