1 ½ lbs ground beef
1 cup breadcrumbs
1 medium onion, finely chopped
2 garlic cloves, minced
1 large egg
½ cup milk
1 tsp paprika
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
1 ½ cups shredded mozzarella cheese
½ cup ketchup
2 tbsp brown sugar
1 tbsp mustard
Instructions
Preheat your oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, egg, milk, paprika, oregano, salt, and black pepper. Mix until well incorporated.
Spread half of the meat mixture evenly in the prepared pan.
Create a shallow well and fill it with shredded mozzarella cheese, leaving space at the edges.
Cover the cheese with the remaining meat mixture, sealing the edges to enclose the mozzarella completely.
In a small bowl, mix ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Use freshly shredded mozzarella for best results.
Substitute breadcrumbs with oat flour for a gluten-free option.
Pair with mashed potatoes or roasted vegetables for a complete meal.
