  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ½ cups broccoli florets
  • 1 cup shredded cheddar cheese
  • ½ tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt, pepper, and paprika, and cook for 5-7 minutes, until browned and cooked through. Remove chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and garlic. Sauté until softened, about 2-3 minutes.
  3. Add the rice and chicken broth to the skillet. Stir and bring to a boil. Reduce heat, cover, and simmer for 15 minutes, or until the rice is cooked.
  4. Add the broccoli florets to the skillet, cover, and cook for another 5 minutes, until the broccoli is tender.
  5. Return the cooked chicken to the skillet and stir to combine. Sprinkle shredded cheddar cheese on top, cover, and let the cheese melt for 2-3 minutes.
