This One Pot Beef Taco Pasta is a delicious fusion of tacos and pasta, made in a single pot for easy cleanup. Packed with seasoned ground beef, tender pasta, and melted cheese, this dish is perfect for a quick and satisfying weeknight dinner.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup tomato sauce
  • 2 cups uncooked pasta (penne or rotini)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup corn (optional)
  • ½ cup black beans (optional)
  • Salt and pepper to taste
  • Fresh cilantro and sour cream for garnish

Instructions

  • In a large pot or skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add diced onion and garlic, cooking until softened.
  • Stir in taco seasoning, beef broth, diced tomatoes, tomato sauce, and pasta. Mix well.
  • Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes or until pasta is tender.
  • Stir in shredded cheeses until melted and creamy.
  • Add corn and black beans if using. Season with salt and pepper.
  • Garnish with fresh cilantro and serve with sour cream. Enjoy!
