  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 12 ounces penne pasta
  • 1 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken and season with Cajun seasoning, paprika, and garlic powder. Cook until browned, about 5-6 minutes. Remove chicken and set aside.
  • In the same pot, sauté onion, red bell pepper, and green bell pepper until softened, about 3-4 minutes. Add garlic and cook for another minute.
  • Pour in chicken broth and heavy cream. Stir well, then add the penne pasta. Bring to a boil, then reduce heat to simmer. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
  • Return the cooked chicken to the pot and mix in Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
  • Adjust seasoning with salt and black pepper. Garnish with fresh parsley and serve hot.

Notes

  • For extra spice, add a pinch of cayenne pepper or more Cajun seasoning.
  • Adjust the creaminess by adding more or less heavy cream based on your preference.
  • Use freshly grated Parmesan for the best flavor.
